A new vegan pasta restaurant is about to open in Manchester.
Pastan is set to open at the beginning of November on Cross Street, planning to “push the boat out” with a 100% plant-based menu.
This is Pastan’s second permanent restaurant, having had success with their London restaurant and occasional pop-up restaurants in Bristol and Notting Hill.
Sophie Weir, Brand Manager at Pastan, said: “We’re really excited to come to Manchester!”
She added: “We obviously had a lot of success in London and we had people travelling far and wide but we wanted to spread Pastan’s ethos further and Manchester is a city that is so vibrant and so lively.”
“We’re all about making uncompromisingly delicious pasta and what that means to us is not sacrificing the resources on the planet to make delicious food.” she added.
Pastan boast a menu which is fresh, 100% plant-based and handcrafted in the UK without artificial colouring or flavouring.
In addition to this, they now run as part of a Carbon Free Dining environmental initiative, an organisation which promises to plant fruit trees in the developing world in return for a small donation from the diner’s bill.
This is a change that Weir believes will offset all the bad things that can affect the environment when running a business.
She said: “I think often people feel like they need to sacrifice in taste or flavour for something that’s vegan, but we’re trying to rewrite that narrative around vegan food.
“It can be tasty. It can be delicious.”
Her recommendation for new Mancunian diners is the Green Velvet dish: pea and shallot ravioli served in a salsa verde with their signature cashew parmesan.
She said: “It’s delicious, it’s so so good.
“There’s something for everyone which is perfect.”
She added that their aim is to spread the love for feel-good food, opening up more locations in England and further in the future.
Right now, their aspirations are success in Manchester, then to open a permanent restaurant in Bristol by the end of the year, followed by Brighton.
Pastan is still in the process of refurbishing before the opening, but hopes the forest green decor will offer a sense of nature to Manchester.
