Mancunian Matters have once again teamed up with top cocktail bar Socio Rehab to bring you a cheeky tipple.

We'll have a recipe ready for you to try at home ahead of the weekend every fortnight, or you can head down to Socio if you'd rather not try your luck.

Each recipe is created specially for MM by Socio's bartenders and they'll be ready and waiting for you to go in and try at the Northern Quarter favourite.

This week...Thai Bomb

  • Bird’s eye chili to taste (be cautious, around 1/5 is enough for most people)

  • 50ml Chairman’s Reserve Rum

  • 50ml Coconut water (available from Tescos and specialist food stores)

  • 2 barspoons of sweet Italian vermouth

  • Few dashes of Chocolate bitters (available from Harvey Nichols and specialist food stores)

  • 1 barspoon of sugar syrup

 

Choose a decent, aged dark or golden rum because it’s a drink that relies quite heavily on the quality of the rum as it has no mixer as such. There’s no need to spend a fortune – Chairman’s Reserve is a good bet and is available in Sainsbury’s, as is Mount Gay – but there are plenty of other options too.

Put the chili cut into large segments into the glass. Be cautious how much you use. Around a fifth of a bird’s eye chili is about right for most palates, but if you prefer things with a kick, feel free to add more!

Add the rum, coconut water and sweet Italian vermouth. The sweet vermouth is only used in a small amount, but just gives it that bit of depth and nice amber colour.

Lightly press and stir the chili into the rum and coconut water to get the heat and create a chili infused rum

Add the few dashes of chocolate bitters and sugar syrup to taste. The chocolate is there to play on the classic chili and chocolate combination that everyone loves.

Strain to serve and add chilies to garnish (but watch your lips when drinking!)
