DELICIOUS: Halloumi and courgette salad

MM's resident foodie is back with another of her low-budget dishes. This week we take a trip to the Med with a healthy halloumi and courgette salad. Bon appetit!

Halloumi and courgette salad

Serves 2

1 Pack of Halloumi cheese

1 Courgette

Mixed Peppers

Mixed lettuce leaves

3 tbsp Flour

Dried chilli flakes

1 spring onion

Black pepper

Olive Oil

This recipe is so easy and hassle free there’s hardly any cooking involved i.e. less washing up! It’s also quite healthy.

I spoke to someone recently who had never tried Halloumi cheese before and I just can’t believe this!

The most important thing here is to have a really hot pan, preferably a griddle pan but it’s not a big deal.

You can make the salad any way you like and you can just chop the peppers and add them raw but for this I prefer to roast them.

Preheat the oven to 200 and chop the peppers and place them on a baking tray. Drizzle over some olive oil and mixed herbs then place in the oven for around 10-15 mins.

Next, chop the courgette and the cheese and start heating a pan with olive oil in to a medium-high heat. Then, as that’s heating place some flour onto a plate, add some dried chillies and black pepper but NOT salt.

Halloumi is naturally salty and you really shouldn’t need to add anymore before you cook it.

Give the flour mixture a bit of a mix around and then just coat the cheese in it before placing the cheese carefully in the hot pan with
oil. Add the courgettes and cook until they are slightly browned, turning over once.

Remove the peppers from the oven and place on some kitchen
paper to soak up any excess oil, you can do the same with the cheese and courgette and then just add it all to the lettuce, spring onions and whatever salad items you have chosen.

I usually top it off with a cheeky bit of sweet chilli sauce but balsamic vinegar works well also.
