MM's resident foodie is back with another of her low-budget dishes. This week's is a great option if you don't have much left in the cupboards but want a healthier meal than bacon butties!
Tuna and Tomato Rice
1 tin of Tuna (in brine or water)
1 tin of chopped tomatoes
1 small onion
Few rashers of smoked bacon
1 red pepper
1 clove of garlic
Pinch of dried oregano
1 cup of rice (brown or white)
Splash of white wine
This is a simple recipe made with only store cupboard ingredients so it’s perfect if you don’t have time for a trip to the shops just yet! This will tide you over.
Firstly boil the rice in a pot, this should take about 15 minutes, or longer if using brown rice but check the packet for instructions.
Chop the onions, garlic and peppers then in a frying pan on a medium heat, fry off the rashers of bacon then remove and set aside. In the same pan, fry off the onions, then garlic then add the peppers.
Chop the bacon into small bits and put them back into the pan with the onions. Once the bacon and vegetables looks suitably browned, throw in the white wine and then the tuna once the wine has reduced.
Mix in the tuna and then add the tomatoes and season with salt and pepper. Add the oregano and heat the mixture through until the tomatoes have reduced a bit.
Once the rice is ready and the water has disappeared then add the tomato mixture to the rice and mix through. Serve as it is or with some salad.
